So annoying when it happens. you get to the ball in time, you swing- it feels cleans but the ball hits your racket twice.
I find this happens to me on boasts(not so often) where it goes, racket-ball-racket (and occasionally racket-ball-racket-ball-racket-ball-racket-backwards :P). I think I just need to make sure my racket face is open to stop that one, yes?
But when I'm lunging(or not even lunging sometimes) for a drop/boast on (moreso) my forehand, (with the idea of doing a drop myself) I seem to scoop the ball, or the ball hits my racket twice. Why is this happening? I feel that I'm in position( sometimes I have the wrong foot worward) and I swing fairly cleanly, but it doesnt quite go according to plan.
Any ideas on how to prevent this?

Adam - you are probably right about the open racket on the boasts, but also more likely you are aiming too straight into the side wall. These diagrams about angles give a good idea of where to aim on the side wall to get the desired angle into the nick.
As for the drop shot, you have probably extended your racket arm so far you are not actually striking the ball, but trying to lift the ball up but there is no swing left and it becomes a scoop/sling shot. Try not to extend your arm so far when you are in full flight and make sure you actually get under the ball with your racket., as opposed to almost catching the ball on the racket.
Give that a try.
